4 Minute Mug Cakes, 2 Ways

Hi Loves! I just want to begin by thanking you all for your constant support. I know I say this all the time but honestly, all the comments and feedback that you send me via Instagram are so humbling. I have added all your recipe requests to my content plan so please be patient. Also, for all those who were having a problem commenting here on the blog, you can now comment without having to be a WordPress user. 🙂

Now, the way this Nairobi weather is set up, all one really wants to do is cuddle up and bum all day. Although I bet most of you, like me, may not be able to do that cause there is stuff to be done. And after a long day’s work, what better way to treat yourself than with a delicious homemade mug cake?

Who would have thought that you do not necessarily need an oven to bake a cake? You heard me right, I used the microwave to bake these amazing mug cakes and they both baked in 2 minutes each. I made 2 mug cake options for you to choose from: Chocolate, aka Calories Galore and Cinnamon & Oat, aka Healthy Pick-me-up.

I really hope you try them out and enjoy as you catch up on your favorite series this weekend! 🙂

Chocolate Mug Cake

3 tbsps Home Baking Flour

2 tbsps Powdered Drinking Chocolate

1 & 1/2 tbsp Powdered or Granulated Sugar

4 Cubes Dairyland Chocolate

3 tbsps Milk

1 tsp Baking Powder

1/2 tsp Vanilla Essence

1 tbsp Olive Oil

1 Egg

Pinch of Salt

  1. Coat your microwave friendly cup with Olive Oil or any cooking oil so that it is easier to wash the cup once you are done. You can also use melted butter or margarine but the cake is more spongy if you use liquid oil.
  2. Whisk your eggs, milk and vanilla essence in the cup. You can also add a few drops of mint essence if you have some. Dry Ingredients.jpg
  3. Add the dry ingredients and whisk until you get your preferred consistency.
  4. Add the chocolate cubes and push to the bottom of the cup.Dairyland.jpg
  5. Put in the microwave for 1 and a half to 2 minutes, being careful not to over cook it like I did because if you do, the chocolate cubes will cook instead of simply melting.
  6. Garnish with powdered sugar and enjoy!
